If this is your first JSF project and no existing code involved, it might be best to start with the latest, and code/develop accordingly (that's what I do...smile).
If you're currently at version 2.2.1 or 2.x, and don't have time for (and don't want to worrying about) migrating to latest version of PrimeFaces, then stay at 2.x/2.2.1.
When I started, I looked at Showcase and Showcase Labs, and I liked all the new options/components available in 3.0 (or Showcase Labs), so I started my JSF/Primefaces web app development with 3.0M3.
I've seen people here that have older versions of Primefaces, and they're existing code have issues when they migrate to newer/latest version. My frame of mind is to code/develop to latest version, and there is always a workaround for issues that you may have.

Better start with 3.0.RC2 and update to 3.0 final on 2nd of january. 2.x is almost a year old and not maintained, consider it legacy.
