I just had a few questions about how exactly the customisation works from a design point of view. Is it just a case of the designer customising the fonts, colours etc from each section, but keeping the tokens as they are? Then the changes can be exported from Figma and reflected?

There is no simple solution for design to code hand-off for now.
The simplest way to achieve customizations on code is to buy the Designer tool for the framework you use (ex: https://www.primefaces.org/designer/primeng for PrimeNG). Then developers can set/change the values on _variables.scss manually.
We're working on a solution for an easy hand-off process, but it might take time to release.
