Multiselect selections

I was curious to know if there is any way to intercept how the selections in the multi select are rendered. I have a number of items that are all selected by default and it's a bit unsightly. I'd be happy with not displaying the list at all and just having the dropdown if that's possible. I attached a screenshot linked below.
