How to update to new ultima version?

HI everyone,
I'm using the Ultima template, and I'm really happy to use it! My question is about the step to follow in order to upgrade my project when a new version is released.
What are the steps?

My situation is the following one:

1. I've the .jar file in lib folder
2. I've the sass folder and ultima-layout in webconent/resources

I've seen in the last release 2.0.2 that there are many new folder like primefaces-ultima-blue, why? Is it normal that if I delete the folder sass in my Eclipse project, clean the project and the wildly the web site still work (I've also deleted the cache in Google Chrome)?
